Ingredients

  • 1 cup black beans, rinsed and drained
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Remove from heat and let it sit for 5 minutes.
  5. Fluff quinoa with a fork.
  6. In a large bowl, mix quinoa, bell peppers, black beans, corn, cumin, chili powder, lime juice, salt, and pepper.
  7. Serve warm or chilled.
