Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup chopped bell peppers
- 1 cup black beans, rinsed and drained
- 1 cup corn
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Remove from heat and let it sit for 5 minutes.
- Fluff quinoa with a fork.
- In a large bowl, mix quinoa, bell peppers, black beans, corn, cumin, chili powder, lime juice, salt, and pepper.
- Serve warm or chilled.

- Make sure all ingredients are certified gluten free.
- Adjust spices to your taste.
- This dish can be prepared a day ahead.
