Ingredients

- 2 cups quinoa
- 4 cups vegetable broth
- 1 cup cranberries
- 1 cup chopped pecans
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1 tablespoon olive oil
- 1 cup diced apples
Instructions
- Rinse the quinoa under cold water.
- In a pot, bring vegetable broth to a boil.
- Add quinoa and reduce heat. Cover and simmer for 15 minutes.
- Stir in cranberries, pecans, cinnamon, and salt.
- Remove from heat and let it rest for 5 minutes.
- Fluff with a fork and mix in olive oil and diced apples.
- Serve warm.
