Ingredients

- 2 cups of rice

- 2 cloves of garlic, minced

Instructions
- Rinse the rice under cold water until the water runs clear.
- In a pot, heat olive oil over medium heat.
- Add chopped onion and garlic, sauté until translucent.
- Add the rinsed rice, stir for 2 minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 18 minutes.
- Add mixed vegetables, stir, and cook for an additional 5 minutes.
- Season with salt and pepper to taste.
