  • 1/2 cup heavy cream
  • 1 tablespoon powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Place the pie crust in a pie dish and bake for 10 minutes.
  3. In a saucepan, combine coconut milk, whole milk, sugar, cornstarch, and salt. Whisk until smooth.
  4. Heat the mixture over medium heat until it thickens, stirring constantly.
  5. Remove from heat and whisk in egg yolks and vanilla.
  6. Stir in shredded coconut.
  7. Pour the filling into the baked pie crust.
  8. Chill in the refrigerator for at least 4 hours.
  9. Whip the heavy cream and powdered sugar until soft peaks form.
  10. Spread whipped cream over the chilled pie before serving.
