Ingredients

  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat grill to medium-high heat.
  2. Season chicken with salt, pepper, and oregano.
  3. Grill chicken for 6-7 minutes on each side until cooked through.
  4. Remove chicken and let it rest for a few minutes.
  5. Slice the chicken into strips.
  6. In a bowl, combine quinoa, tomatoes, cucumber, red onion, olives, and feta.
  7. In a small bowl, whisk olive oil and lemon juice together.
