A healthy and delicious Greek chicken bowl packed with flavor.
Ingredients

- 1 lb chicken breast
- 2 cups cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, sliced
- 1/2 cup Kalamata olives, pitted
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- Season chicken with salt, pepper, and oregano.
- Grill chicken for 6-7 minutes on each side until cooked through.
- Remove chicken and let it rest for a few minutes.
- Slice the chicken into strips.
- In a bowl, combine quinoa, tomatoes, cucumber, red onion, olives, and feta.
- In a small bowl, whisk olive oil and lemon juice together.
- Drizzle dressing over the salad and mix well.
- Top salad with sliced chicken.
- Serve immediately.
