Ingredients

- 1 cup quinoa
- 2 cups water
- 2 chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon oregano
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup olives
- 2 tablespoons lemon juice
- Fresh parsley for garnish
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Remove from heat and let sit for 5 minutes.
- While quinoa cooks, heat olive oil in a pan over medium heat.
- Season chicken breasts with oregano, garlic powder, salt, and pepper.
- Cook chicken for 6-7 minutes on each side or until cooked through.
- Slice chicken into strips.
- In a bowl, combine quinoa, chicken, tomatoes, cucumber, red onion, feta, and olives.
- Drizzle with lemon juice and toss to combine.
- Garnish with parsley before serving.

- This bowl can be served warm or cold.
