Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 2 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives
  • 2 tablespoons lemon juice
  • Fresh parsley for garnish

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Remove from heat and let sit for 5 minutes.
  5. While quinoa cooks, heat olive oil in a pan over medium heat.
  6. Season chicken breasts with oregano, garlic powder, salt, and pepper.
  7. Cook chicken for 6-7 minutes on each side or until cooked through.
  8. Slice chicken into strips.
  9. In a bowl, combine quinoa, chicken, tomatoes, cucumber, red onion, feta, and olives.
  10. Drizzle with lemon juice and toss to combine.
  11. Garnish with parsley before serving.
