Greek turkey meatballs served with a refreshing cucumber yogurt sauce.


Ingredients

  • 1 lb ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 clove garlic, minced
  • 1 egg, beaten
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cucumber, peeled and diced
  • 1 cup plain Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine ground turkey, breadcrumbs, Parmesan, parsley, garlic, egg, oregano, salt, and pepper. Mix well.
  3. Form the mixture into meatballs, about 1 inch in diameter.
  4. Place the meatballs on a baking sheet lined with parchment paper.
  5. Bake for 20-25 minutes until cooked through and golden brown.
  6. While the meatballs are baking, prepare the cucumber yogurt sauce by mixing diced cucumber, Greek yogurt, lemon juice, and olive oil in a bowl.
  7. Serve meatballs warm with cucumber yogurt sauce on the side.

Notes

  • You can add feta cheese to the meatball mixture for extra flavor.
  • For a spicier version, add red pepper flakes to the meatball mix.
  • Garnish with additional parsley or mint for a fresh touch.
