Description
A refreshing and creamy macaroni salad made with Greek yogurt.
Ingredients

- 2 cups elbow macaroni
- 1 cup Greek yogurt
- 1/2 cup mayonnaise
- 1 cup diced cucumbers
- 1 cup diced bell peppers
- 1/2 cup chopped red onion
- 1/4 cup chopped fresh dill
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Cook the macaroni according to package instructions. Drain and rinse under cold water.
- In a large bowl, combine Greek yogurt and mayonnaise.
- Add diced cucumbers, bell peppers, red onion, and dill to the bowl.
- Stir in the cooked macaroni and lemon juice.
- Season with salt and pepper. Mix well.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
- For added flavor, include cherry tomatoes.
- Can be made a day ahead.
