Description

A refreshing and creamy macaroni salad made with Greek yogurt.


Ingredients

  • 2 cups elbow macaroni
  • 1 cup Greek yogurt
  • 1/2 cup mayonnaise
  • 1 cup diced cucumbers
  • 1 cup diced bell peppers
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh dill
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the macaroni according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine Greek yogurt and mayonnaise.
  3. Add diced cucumbers, bell peppers, red onion, and dill to the bowl.
  4. Stir in the cooked macaroni and lemon juice.
  5. Season with salt and pepper. Mix well.
  6. Chill in the refrigerator for at least 1 hour before serving.

Notes

  • For added flavor, include cherry tomatoes.
