Description
Grilled lamb chops with rosemary garlic butter and roasted vegetables.
Ingredients

- 8 lamb chops, about 1 inch thick
- 3 tablespoons fresh rosemary, chopped
- 4 cloves garlic, minced
- 1/2 cup unsalted butter, softened
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 zucchinis, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 red onion, cut into wedges
- 1 teaspoon dried oregano
Instructions
- In a bowl, mix the softened butter, rosemary, and minced garlic. Set aside.
- Season the lamb chops with salt and pepper. Rub them with olive oil.
- Preheat the grill to medium-high heat.
- Grill the lamb chops for 4-5 minutes on each side for medium rare.
- During the last minute of grilling, top each chop with a dollop of the rosemary garlic butter.
- While the lamb is grilling, preheat the oven to 425°F (220°C).
- Toss the zucchini, bell peppers, and onion with olive oil, oregano, salt, and pepper. Spread them on a baking sheet.
- Roast the vegetables for 20-25 minutes until tender and slightly caramelized.
- Plate the grilled lamb chops alongside the roasted vegetables. Serve immediately.
Notes
- For medium, grill the lamb chops for 6-7 minutes on each side.
- Feel free to substitute any seasonal vegetables.
- Marinate the lamb chops for a few hours for enhanced flavor.
