Grilled lamb chops with rosemary garlic butter and roasted vegetables.


Ingredients

  • 8 lamb chops, about 1 inch thick
  • 3 tablespoons fresh rosemary, chopped
  • 4 cloves garlic, minced
  • 1/2 cup unsalted butter, softened
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 zucchinis, sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, cut into wedges
  • 1 teaspoon dried oregano

Instructions

  1. In a bowl, mix the softened butter, rosemary, and minced garlic. Set aside.
  2. Season the lamb chops with salt and pepper. Rub them with olive oil.
  3. Preheat the grill to medium-high heat.
  4. Grill the lamb chops for 4-5 minutes on each side for medium rare.
  5. During the last minute of grilling, top each chop with a dollop of the rosemary garlic butter.
  6. While the lamb is grilling, preheat the oven to 425°F (220°C).
  7. Toss the zucchini, bell peppers, and onion with olive oil, oregano, salt, and pepper. Spread them on a baking sheet.
  8. Roast the vegetables for 20-25 minutes until tender and slightly caramelized.
  9. Plate the grilled lamb chops alongside the roasted vegetables. Serve immediately.

Notes

  • For medium, grill the lamb chops for 6-7 minutes on each side.
  • Feel free to substitute any seasonal vegetables.
  • Marinate the lamb chops for a few hours for enhanced flavor.
