Grilled shrimp skewers marinated in a spicy garlic lime mixture served with couscous.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 2 limes, juiced and zested
  • 1 teaspoon red pepper flakes
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup couscous
  • 2 cups vegetable broth
  • Fresh cilantro, for garnish

Instructions

  1. In a bowl, combine olive oil, garlic, lime juice, lime zest, red pepper flakes, smoked paprika, salt, and black pepper.
  2. Add shrimp to the marinade and let it sit for 30 minutes.
  3. While shrimp marinates, bring vegetable broth to a boil in a pot.
  4. Add couscous to boiling broth, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
  5. Preheat the grill to medium-high heat.
  6. Thread shrimp onto skewers.
  7. Grill skewers for 2-3 minutes on each side until shrimp are opaque and cooked through.
  8. Serve skewers over couscous, garnished with fresh cilantro.

Notes

  • You can soak wooden skewers in water for 30 minutes to prevent burning on the grill.
  • For added flavor, marinate shrimp overnight.
