Description
Grilled shrimp skewers marinated in a spicy garlic lime mixture served with couscous.
Ingredients

- 1 pound large shrimp, peeled and deveined
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 2 limes, juiced and zested
- 1 teaspoon red pepper flakes
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup couscous
- 2 cups vegetable broth
- Fresh cilantro, for garnish
Instructions
- In a bowl, combine olive oil, garlic, lime juice, lime zest, red pepper flakes, smoked paprika, salt, and black pepper.
- Add shrimp to the marinade and let it sit for 30 minutes.
- While shrimp marinates, bring vegetable broth to a boil in a pot.
- Add couscous to boiling broth, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
- Preheat the grill to medium-high heat.
- Thread shrimp onto skewers.
- Grill skewers for 2-3 minutes on each side until shrimp are opaque and cooked through.
- Serve skewers over couscous, garnished with fresh cilantro.
Notes
- You can soak wooden skewers in water for 30 minutes to prevent burning on the grill.
- For added flavor, marinate shrimp overnight.
- Experiment with different herbs like parsley or basil for garnish.
