Description
A hearty ground beef quinoa skillet dish that combines protein and fiber in one pan.
Ingredients

- 1 lb ground beef
- 1 cup quinoa
- 2 cups beef broth
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 tsp cumin
- 1 tsp paprika
- Salt to taste
- Pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a skillet over medium heat.
- Add chopped onion and minced garlic; sauté until soft.
- Stir in ground beef; cook until browned.
- Add bell pepper, diced tomatoes, quinoa, beef broth, cumin, and paprika.
- Bring to a boil, then reduce heat and cover.
- Simmer for 20 minutes or until quinoa is cooked.
- Season with salt and pepper before serving.
Notes
- Feel free to add vegetables of your choice.
- Can substitute ground turkey for a leaner option.
- Leftovers store well in the fridge for up to 3 days.
