Description

Ingredients

  • 1 cup quinoa
  • 2 cups beef broth
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt to taste
  • Pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add chopped onion and minced garlic; sauté until soft.
  3. Stir in ground beef; cook until browned.
  4. Add bell pepper, diced tomatoes, quinoa, beef broth, cumin, and paprika.
  5. Bring to a boil, then reduce heat and cover.
  6. Simmer for 20 minutes or until quinoa is cooked.
  7. Season with salt and pepper before serving.
