- 2 medium sweet potatoes, diced

- 1 cup spinach, chopped
- 1 avocado, sliced
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the diced sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper.
- Spread sweet potatoes on a baking sheet and roast for 25 minutes.
- While sweet potatoes roast, cook ground beef in a skillet over medium heat until browned.
- Season beef with salt and pepper.
- In a bowl, layer roasted sweet potatoes, cooked ground beef, chopped spinach, and avocado slices.
- Serve warm.
