- 2 medium zucchini, diced
- 2 medium sweet potatoes, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon cumin
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and garlic, and sauté until softened.
- Add ground beef and cook until browned.
- Add sweet potatoes, salt, pepper, paprika, and cumin.
- Cover and cook for 10 minutes, stirring occasionally.
- Stir in zucchini and cook for another 5-7 minutes until tender.
- Serve hot.
