Ingredients

  • 2 medium zucchini, diced
  • 2 medium sweet potatoes, peeled and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced

  • 1 teaspoon paprika
  • 1/2 teaspoon cumin

Instructions

  1. Heat olive oil in a large skillet over medium heat.

  4. Add sweet potatoes, salt, pepper, paprika, and cumin.
  5. Cover and cook for 10 minutes, stirring occasionally.
  6. Stir in zucchini and cook for another 5-7 minutes until tender.
  7. Serve hot.
