Ground turkey black bean enchiladas are a healthy and delicious meal option packed with flavor.


Ingredients

  • 1 pound ground turkey
  • 1 can black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 8 corn tortillas
  • 1/2 cup enchilada sauce

Instructions

  1. Preheat your oven to 350°F.
  2. In a skillet, brown the ground turkey over medium heat.
  3. Add black beans, diced tomatoes, chili powder, and cumin to the skillet. Stir well.
  4. Warm the corn tortillas in a separate pan.
  5. Fill each tortilla with the turkey mixture and roll them up.
  6. Place the rolled tortillas in a baking dish.
  7. Pour enchilada sauce over the top and sprinkle with cheese.
  8. Bake for 20 minutes or until cheese is melted.

Notes

  • For extra flavor, add diced onions and bell peppers to the turkey mixture.
