- 1 pound ground turkey
- 1 can black beans, drained and rinsed
- 1 cup diced tomatoes
- 1 cup shredded cheese
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 8 corn tortillas
- 1/2 cup enchilada sauce
Instructions
- Preheat your oven to 350°F.
- In a skillet, brown the ground turkey over medium heat.
- Add black beans, diced tomatoes, chili powder, and cumin to the skillet. Stir well.
- Warm the corn tortillas in a separate pan.
- Fill each tortilla with the turkey mixture and roll them up.
- Place the rolled tortillas in a baking dish.
- Pour enchilada sauce over the top and sprinkle with cheese.
- Bake for 20 minutes or until cheese is melted.
Notes
- For extra flavor, add diced onions and bell peppers to the turkey mixture.
- Serve with sour cream or avocado slices.
- Can be made ahead and reheated.
