Ingredients

  • 1 whole turkey, about 12 pounds
  • 1 cup lime juice
  • 4 cloves garlic, minced
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons parsley, chopped
  • 1 tablespoon paprika
  • 1 tablespoon black pepper
  • 1 tablespoon salt
  • 1 cup vegetable oil
  • 2 cups rice
  • 1 can black beans
  • 1 cup corn
  • 1/2 cup bell peppers, diced
  • 1/2 cup onions, diced
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Clean the turkey and pat it dry.
  3. In a bowl, mix lime juice, garlic, thyme, parsley, paprika, black pepper, and salt to create a marinade.
  4. Rub the marinade all over the turkey and let it sit for at least 2 hours in the refrigerator.
  5. Heat vegetable oil in a large pot and sauté onions and bell peppers until soft.
  6. Add rice, black beans, corn, cumin, and cayenne pepper. Stir well.
  7. Cook the rice mixture according to package instructions.
  8. Place the marinated turkey in a roasting pan and roast for about 3 hours, or until the internal temperature reaches 165°F (74°C).
  9. Let the turkey rest for 20 minutes before carving.
  10. Serve the turkey with the rice mixture.
