Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 bell pepper, diced
- 1 avocado, sliced
- 1/4 cup red onion, finely chopped
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Remove from heat and let sit for 5 minutes.
- Fluff quinoa with a fork.
- In a large bowl, combine quinoa, tomatoes, cucumber, bell pepper, avocado, and red onion.
- Drizzle with olive oil and lemon juice.
- Add salt and pepper to taste.
- Top with feta cheese.
- Serve immediately or chill in the fridge for later.

- Substitute feta with a vegan cheese for a dairy-free option.
- Feel free to add your favorite proteins like chickpeas or grilled chicken.
