Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 bell pepper, diced
  • 1 avocado, sliced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Remove from heat and let sit for 5 minutes.
  5. Fluff quinoa with a fork.
  6. In a large bowl, combine quinoa, tomatoes, cucumber, bell pepper, avocado, and red onion.
  7. Drizzle with olive oil and lemon juice.
  8. Add salt and pepper to taste.
  9. Top with feta cheese.
  10. Serve immediately or chill in the fridge for later.
