A fresh and flavorful Hawaiian chicken salad with pineapple and nuts.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup pineapple chunks
- 1/2 cup celery, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup green onions, sliced
- 1/2 cup mayonnaise
- 1/4 cup chopped walnuts
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine shredded chicken, pineapple, celery, red bell pepper, and green onions.
- In a separate bowl, mix mayonnaise, lemon juice, salt, and pepper.
- Pour the dressing over the chicken mixture and stir to coat.
- Add walnuts and mix gently.
- Chill for at least 30 minutes before serving.
Notes
- Serve on a bed of lettuce or in a sandwich.
- Can be made a day ahead for better flavor.
