Ingredients

  • 1 lb chicken breast
  • 6 cups chicken broth
  • 1 cup long rice noodles
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 green onions, sliced
  • 1 carrot, diced
  • 1 tablespoon soy sauce
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add chopped onion and garlic, sauté until fragrant.
  3. Place chicken breast in the pot, season with salt and pepper.
  4. Add chicken broth and bring to a boil.
  5. Reduce heat and simmer until chicken is cooked through.
  6. Remove chicken, shred it, and return it to the pot.
  7. Add long rice noodles and diced carrot, cook until noodles are tender.
  8. Stir in soy sauce and green onions before serving.
