Description
A comforting Hawaiian-style chicken long rice soup.
Ingredients

- 1 lb chicken breast
- 6 cups chicken broth
- 1 cup long rice noodles
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 green onions, sliced
- 1 carrot, diced
- 1 tablespoon soy sauce
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, heat some oil over medium heat.
- Add chopped onion and garlic, sauté until fragrant.
- Place chicken breast in the pot, season with salt and pepper.
- Add chicken broth and bring to a boil.
- Reduce heat and simmer until chicken is cooked through.
- Remove chicken, shred it, and return it to the pot.
- Add long rice noodles and diced carrot, cook until noodles are tender.
- Stir in soy sauce and green onions before serving.

- Adjust seasoning as per taste.
- Can add vegetables like bok choy for extra nutrition.
