Instructions
- Preheat the oven to 350°F (175°C).
- Grease and flour three 9-inch round cake pans.
- In a large bowl, mix flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine oil, eggs, crushed pineapple, and vanilla.
- Mix wet ingredients into dry ingredients until just combined.
- Fold in shredded coconut and chopped walnuts.
- Divide batter evenly among the prepared pans.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.
- For frosting, beat cream cheese and powdered sugar until smooth.
- In a separate bowl, whip heavy cream to stiff peaks, then fold into cream cheese mixture.
- Frost each layer of cake and the top with whipped cream cheese frosting.
