Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour three 9-inch round cake pans.
  3. In a large bowl, mix flour, sugar, baking powder, baking soda, and salt.
  4. In another bowl, combine oil, eggs, crushed pineapple, and vanilla.
  5. Mix wet ingredients into dry ingredients until just combined.
  6. Fold in shredded coconut and chopped walnuts.
  7. Divide batter evenly among the prepared pans.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.
  10. For frosting, beat cream cheese and powdered sugar until smooth.
  11. In a separate bowl, whip heavy cream to stiff peaks, then fold into cream cheese mixture.
  12. Frost each layer of cake and the top with whipped cream cheese frosting.
