Healthy air fryer cauliflower rice bowls are a nutritious and flavorful meal option. They combine the lightness of cauliflower rice with a variety of fresh ingredients.


Ingredients

  • 1 medium head cauliflower, riced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 cup black beans, drained and rinsed
  • 1 avocado, sliced
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. Rice the cauliflower using a food processor or box grater.
  3. In a bowl, combine riced cauliflower, olive oil, garlic powder, onion powder, salt, and pepper.
  4. Toss until the cauliflower is evenly coated.
  5. Place the cauliflower mixture in the air fryer basket in a single layer.
  6. Cook for 10-12 minutes, shaking the basket halfway through.
  7. While the cauliflower cooks, prepare the other ingredients.
  8. Once cooked, remove the cauliflower rice and assemble your bowls with the tomatoes, bell pepper, black beans, and avocado on top.
  9. Garnish with fresh cilantro before serving.
