- 1 medium head cauliflower, riced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- 1 cup cherry tomatoes, halved
- 1 bell pepper, diced
- 1 cup black beans, drained and rinsed
- 1 avocado, sliced
- Fresh cilantro, for garnish
Instructions
- Preheat the air fryer to 400°F (200°C).
- Rice the cauliflower using a food processor or box grater.
- In a bowl, combine riced cauliflower, olive oil, garlic powder, onion powder, salt, and pepper.
- Toss until the cauliflower is evenly coated.
- Place the cauliflower mixture in the air fryer basket in a single layer.
- Cook for 10-12 minutes, shaking the basket halfway through.
- While the cauliflower cooks, prepare the other ingredients.
- Once cooked, remove the cauliflower rice and assemble your bowls with the tomatoes, bell pepper, black beans, and avocado on top.
- Garnish with fresh cilantro before serving.
Notes
- For added flavor, squeeze lime juice over the assembled bowls.
- You can substitute the black beans with chickpeas or grilled chicken for variation.
