- 1 cup whole wheat breadcrumbs

- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
- Olive oil spray
Instructions
- Preheat your air fryer to 375°F (190°C).
- Slice the eggplant and sprinkle salt on both sides. Let it sit for 30 minutes to draw out moisture.
- Rinse the eggplant slices and pat them dry.
- In a bowl, mix the breadcrumbs, Parmesan cheese, oregano, garlic powder, salt, and pepper.
- Dip each eggplant slice in the breadcrumb mixture, ensuring an even coating.
- Arrange the breaded eggplant slices in a single layer in the air fryer basket. Spray lightly with olive oil.
- Cook for 10-12 minutes, flipping halfway, until golden brown and crispy.
- In a baking dish, layer marinara sauce, air-fried eggplant, and mozzarella cheese. Repeat layers.
- Air fry the assembled dish for an additional 5-7 minutes until the cheese is bubbly.
