  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. Slice the eggplant and sprinkle salt on both sides. Let it sit for 30 minutes to draw out moisture.
  3. Rinse the eggplant slices and pat them dry.

  9. Air fry the assembled dish for an additional 5-7 minutes until the cheese is bubbly.
