Ingredients

  • 4 large bell peppers
  • 1 cup quinoa, cooked
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix quinoa, black beans, corn, diced tomatoes, cumin, smoked paprika, garlic powder, salt, and pepper.
  4. Stuff the mixture into the bell peppers.
  5. If using, top with shredded cheese.
  6. Place stuffed peppers in the air fryer basket.
  7. Cook for 12-15 minutes or until peppers are tender and cheese is melted.
