Ingredients

- 4 large bell peppers
- 1 cup quinoa, cooked
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or fresh
- 1 cup diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Preheat the air fryer to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a bowl, mix quinoa, black beans, corn, diced tomatoes, cumin, smoked paprika, garlic powder, salt, and pepper.
- Stuff the mixture into the bell peppers.
- If using, top with shredded cheese.
- Place stuffed peppers in the air fryer basket.
- Cook for 12-15 minutes or until peppers are tender and cheese is melted.
