Ingredients

  • 1 block firm tofu (14 oz), drained and pressed
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 bell pepper, chopped
  • 1 zucchini, sliced
  • 1 cup broccoli florets
  • Salt and pepper to taste

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. Cut the pressed tofu into cubes and marinate with soy sauce, olive oil, garlic powder, onion powder, and smoked paprika for at least 15 minutes.
  3. In a mixing bowl, combine chopped bell pepper, zucchini, and broccoli. Season with salt and pepper.
  4. Add the marinated tofu to the bowl and toss to combine.
  5. Place the tofu and vegetable mixture in the air fryer basket in a single layer.
  6. Cook for 15-20 minutes, shaking the basket halfway through for even cooking.
