Ingredients

- 1 block firm tofu (14 oz), drained and pressed
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 bell pepper, chopped
- 1 zucchini, sliced
- 1 cup broccoli florets
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 400°F (200°C).
- Cut the pressed tofu into cubes and marinate with soy sauce, olive oil, garlic powder, onion powder, and smoked paprika for at least 15 minutes.
- In a mixing bowl, combine chopped bell pepper, zucchini, and broccoli. Season with salt and pepper.
- Add the marinated tofu to the bowl and toss to combine.
- Place the tofu and vegetable mixture in the air fryer basket in a single layer.
- Cook for 15-20 minutes, shaking the basket halfway through for even cooking.
- Check for desired crispiness and adjust cooking time if necessary.
- Serve hot, garnished with fresh herbs if desired.
