Instructions
- Rinse the quinoa under cold water.
- Cook the quinoa in a pot with 4 cups of water.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Drain any excess water and let it cool.
- In a large bowl, combine quinoa, tomatoes, cucumber, and bell pepper.
- In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and mix well.
- Serve chilled or at room temperature.
