A collection of healthy side dishes perfect for Thanksgiving.
Ingredients

- 2 cups of green beans
- 1 cup of quinoa
- 1 cup of chopped sweet potatoes
- 1 cup of cranberries
- 2 tablespoons of olive oil
- 1 teaspoon of salt
- 1 teaspoon of pepper
- 1 tablespoon of fresh thyme
Instructions
- Preheat the oven to 400°F (200°C).
- Chop the sweet potatoes into cubes and toss with olive oil, salt, and pepper.
- Spread the sweet potatoes on a baking sheet and roast for 25 minutes.
- Cook quinoa according to package instructions.
- In a pot, steam the green beans until tender, about 5 minutes.
- Mix roasted sweet potatoes, cooked quinoa, green beans, and cranberries in a large bowl.
- Add fresh thyme and toss to combine.
- Serve warm.

- Feel free to add other vegetables.
- Adjust seasoning to your taste.
- This dish can be made ahead and reheated.
