Ingredients

  • 2 cups of green beans
  • 1 cup of quinoa
  • 1 cup of chopped sweet potatoes
  • 1 cup of cranberries
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 1 tablespoon of fresh thyme

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Chop the sweet potatoes into cubes and toss with olive oil, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25 minutes.
  4. Cook quinoa according to package instructions.
  5. In a pot, steam the green beans until tender, about 5 minutes.
  6. Mix roasted sweet potatoes, cooked quinoa, green beans, and cranberries in a large bowl.
  7. Add fresh thyme and toss to combine.
  8. Serve warm.
