A warm and filling cheddar garlic herb potato soup that is perfect for cold days.
Ingredients

- 4 large potatoes, diced
- 1 cup cheddar cheese, shredded
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and minced garlic, sauté until soft.
- Add diced potatoes, vegetable broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Stir in heavy cream and cheddar cheese until melted.
- Blend the soup for a creamy texture or leave it chunky as preferred.
- Serve hot with additional cheese and herbs on top.
