Description

Delicious high hat chocolate cherry cream cupcakes topped with a rich chocolate ganache.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 cup cherry filling
  • 1 cup chocolate chips
  • 1 cup heavy cream
  • 8 ounces dark chocolate, chopped

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a bowl, mix flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add butter, eggs, vanilla, and buttermilk. Mix until smooth.
  4. Fold in cherry filling and chocolate chips.
  5. Pour batter into liners, filling each about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let cupcakes cool completely.
  8. Melt dark chocolate and heavy cream together to create ganache.
  9. Once cooled, dip each cupcake into the ganache and let excess drip off.
  10. Chill cupcakes until ganache is set.
