A comforting and hearty homemade chicken noodle soup made in a crockpot.
Ingredients

- 1 pound of boneless, skinless chicken breasts
- 4 cups of chicken broth
- 2 cups of carrots, sliced
- 2 cups of celery, sliced
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 teaspoon of dried thyme
- 1 teaspoon of dried parsley
- 1/2 teaspoon of black pepper
- 8 ounces of egg noodles
- Salt to taste
Instructions
- Place chicken breasts in the crockpot.
- Add chicken broth, carrots, celery, onion, garlic, thyme, parsley, and pepper.
- Stir to combine.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Remove chicken, shred it, and return it to the pot.
- Add egg noodles and cook for an additional 30 minutes on high.
- Season with salt if needed before serving.
Notes
- For a thicker soup, reduce the broth.
- You can add peas or corn for extra vegetables.
- This soup freezes well for later meals.
