A comforting and hearty homemade chicken noodle soup made in a crockpot.


Ingredients

  • 1 pound of boneless, skinless chicken breasts
  • 4 cups of chicken broth
  • 2 cups of carrots, sliced
  • 2 cups of celery, sliced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried parsley
  • 1/2 teaspoon of black pepper
  • 8 ounces of egg noodles
  • Salt to taste

Instructions

  1. Place chicken breasts in the crockpot.
  2. Add chicken broth, carrots, celery, onion, garlic, thyme, parsley, and pepper.
  3. Stir to combine.
  4. Cook on low for 6-8 hours or high for 3-4 hours.
  5. Remove chicken, shred it, and return it to the pot.
  6. Add egg noodles and cook for an additional 30 minutes on high.
  7. Season with salt if needed before serving.

Notes

  • For a thicker soup, reduce the broth.
  • You can add peas or corn for extra vegetables.
