Ingredients

  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans
  • 1 cup evaporated milk
  • 1/2 cup butter
  • 1 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour three 9-inch round cake pans.
  3. In a large bowl, mix flour, cocoa powder, sugar, baking soda, baking powder, and salt.
  4. Add eggs, milk, oil, and vanilla. Beat until smooth.
  5. Stir in boiling water until combined.
  6. Pour batter evenly into prepared pans.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Let cool in pans for 10 minutes, then transfer to wire racks.
  9. For frosting, combine evaporated milk, butter, brown sugar, and cook over medium heat until thickened.
  10. Remove from heat, stir in coconut and pecans.
  11. Spread frosting between cake layers and on top.
