Homemade Nutter Butter cookies are delicious peanut butter sandwich cookies filled with creamy peanut butter frosting.

- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup powdered sugar (for frosting)
- 1/2 cup creamy peanut butter (for frosting)
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, cream together peanut butter, butter, granulated sugar, and brown sugar.
- Add eggs and vanilla, mix until smooth.
- In another bowl, whisk flour, baking soda, and salt.
- Gradually add dry ingredients to the wet mixture.
- Shape dough into small balls and place on a baking sheet.
- Flatten each ball with a fork to create a criss-cross pattern.
- Bake for 10-12 minutes or until golden.
- Let cookies cool on a wire rack.
- For frosting, mix powdered sugar and peanut butter until smooth.
- Spread frosting on half of the cookies and top with the remaining cookies.
