Delicious homemade oatmeal cream pies with a creamy filling.
Ingredients

- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3 cups old-fashioned oats
- 1 cup marshmallow fluff
- 1/2 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the butter, brown sugar, and granulated sugar.
- Add the eggs and vanilla extract. Mix well.
- In another bowl, combine flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture.
- Stir in the oats until fully combined.
- Drop tablespoons of dough onto a baking sheet.
- Bake for 10-12 minutes until golden brown. Let cool.
- In a separate bowl, mix marshmallow fluff and powdered sugar to make the filling.
- Spread filling on the flat side of half the cookies and top with the remaining cookies.
Notes
- Store in an airtight container.
- These cookies can be frozen for later use.
