Ingredients

  • 1/4 cup honey
  • 1/4 cup lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 ripe mango, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 1 jalapeno, minced (optional)

Instructions

  1. In a bowl, mix honey, lime juice, garlic powder, paprika, salt, and pepper.
  2. Marinate chicken in the mixture for at least 30 minutes.
  3. Preheat grill to medium-high heat.
  4. Grill chicken for 6-7 minutes on each side, or until fully cooked.
  5. In another bowl, combine mango, red onion, cilantro, lime juice, and jalapeno (if using).
  6. Serve chicken topped with mango salsa.

Notes

  • Adjust spice level by adding more or less jalapeno.
