Ingredients

  • 4 chicken breasts
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups mixed vegetables (carrots, bell peppers, zucchini)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix honey, Dijon mustard, olive oil, garlic powder, salt, and pepper.
  3. Coat chicken breasts with the honey mustard mixture.
  4. Place chicken on a baking sheet.
  5. In a separate bowl, toss mixed vegetables with olive oil, salt, and pepper.
  6. Add vegetables to the baking sheet around the chicken.
  7. Bake for 25-30 minutes or until chicken is cooked through.
  8. Let rest for 5 minutes before serving.
