- 1/2 cup heavy cream
- 4 tablespoons butter
- Chives, chopped for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix honey, Dijon mustard, olive oil, minced garlic, salt, and pepper.
- Rub the mixture over the pork chops evenly.
- Heat a large oven-safe skillet over medium-high heat and sear the pork chops for 3-4 minutes on each side until browned.

- While the pork is cooking, boil the potatoes in salted water until tender, about 15 minutes.
- Drain the potatoes and return them to the pot.
- Add heavy cream, butter, salt, and pepper to the potatoes, then mash until smooth.
- Plate the mashed potatoes and top with the honey mustard pork chops.
- Garnish with chopped chives.
