  • 1/4 cup Dijon mustard

  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup heavy cream
  • 4 tablespoons butter
  • Chives, chopped for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix honey, Dijon mustard, olive oil, minced garlic, salt, and pepper.
  3. Rub the mixture over the pork chops evenly.
  4. Heat a large oven-safe skillet over medium-high heat and sear the pork chops for 3-4 minutes on each side until browned.
  5. Transfer the skillet to the oven and roast for 15-20 minutes until the chops reach an internal temperature of 145°F (63°C).
  6. While the pork is cooking, boil the potatoes in salted water until tender, about 15 minutes.

  8. Add heavy cream, butter, salt, and pepper to the potatoes, then mash until smooth.
  9. Plate the mashed potatoes and top with the honey mustard pork chops.
  10. Garnish with chopped chives.
