Description
Hoppin’ John is a traditional Southern dish made with black-eyed peas and rice.
Ingredients

- 1 cup black-eyed peas
- 1 cup long-grain rice
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 smoked ham hock
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon cayenne pepper (optional)
- 2 tablespoons olive oil
Instructions
- Soak the black-eyed peas overnight.
- In a pot, heat olive oil over medium heat.
- Add onion and garlic, cooking until soft.
- Add ham hock, soaked peas, water, salt, and peppers.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Add rice, cover, and cook for another 20 minutes until rice is tender.
- Remove ham hock, shred meat, and stir back into the pot.
- Serve warm.
Notes
- Use fresh or frozen peas if available.
- Adjust seasoning to taste.
- Great with cornbread on the side.
