Description

Hoppin’ John is a traditional Southern dish made with rice and black-eyed peas.


Ingredients

  • 1 cup black-eyed peas, dried
  • 1 cup long-grain rice
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 2 tablespoons olive oil

Instructions

  1. Soak black-eyed peas overnight in water.
  2. In a pot, heat olive oil over medium heat.
  3. Add onion, bell pepper, and garlic. Sauté until soft.
  4. Add soaked peas and chicken broth to the pot.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Add rice, salt, and spices. Stir well.
  7. Cover and cook for 20 minutes or until rice is tender.
  8. Remove from heat and let sit for 5 minutes before serving.

Notes

  • Serve with cornbread for a complete meal.
  • Garnish with chopped green onions if desired.
