Description
A traditional Southern dish made with black-eyed peas and rice.
Ingredients

- 1 cup black-eyed peas, dried
- 1 cup long-grain rice
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon cayenne pepper
- 1 smoked ham hock
Instructions
- Soak black-eyed peas overnight in water.
- Drain and rinse peas.
- In a pot, combine peas, water, onion, garlic, and ham hock.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Remove the ham hock and set aside to cool.
- Add rice, green bell pepper, salt, black pepper, and cayenne to the pot.
- Stir well, cover, and cook on low heat for 20 minutes.
- Shred ham from the hock and mix it back into the pot.
- Serve warm.
Notes
- Use fresh black-eyed peas for better flavor.
- Adjust spices to your taste.
- Serve with cornbread for a complete meal.
