Description
Hoppin’ John is a traditional Southern dish made with black-eyed peas and rice, often served on New Year’s Day for good luck.
Ingredients

- 1 cup black-eyed peas
- 1 cup long-grain rice
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 2 tablespoons olive oil
- 1 bay leaf
- Optional: cooked ham or sausage, chopped
Instructions
- Rinse the black-eyed peas and soak them overnight.
- In a pot, heat olive oil over medium heat.
- Add onion, garlic, and green bell pepper. Sauté until soft.
- Add soaked black-eyed peas, water, salt, black pepper, cayenne, and bay leaf.
- Bring to a boil, then reduce heat and simmer for about 45 minutes.
- Add rice and stir. Cover and cook for an additional 20 minutes, or until rice is done.
- Remove bay leaf before serving.
- Serve warm, optionally with chopped ham or sausage on top.
Notes
- For best flavor, use smoked meat.
- Adjust spices to your taste.
