Description

Ingredients

  • 1 cup long-grain rice
  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped

  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 2 tablespoons olive oil
  • 1 bay leaf
  • Optional: cooked ham or sausage, chopped

Instructions

  1. Rinse the black-eyed peas and soak them overnight.
  2. In a pot, heat olive oil over medium heat.
  3. Add onion, garlic, and green bell pepper. Sauté until soft.
  4. Add soaked black-eyed peas, water, salt, black pepper, cayenne, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for about 45 minutes.
  6. Add rice and stir. Cover and cook for an additional 20 minutes, or until rice is done.
  7. Remove bay leaf before serving.
  8. Serve warm, optionally with chopped ham or sausage on top.
