Description

Instructions

  1. Rinse the black-eyed peas and soak them in water overnight.
  2. In a large pot, combine soaked peas, water, ham hock, onion, bell pepper, garlic, salt, and peppers.
  3. Bring to a boil, then reduce heat and simmer for 1 hour or until peas are tender.
  4. Add rice to the pot and stir well.
  5. Cover and cook for an additional 20 minutes or until rice is cooked.
  6. Remove ham hock, shred meat, and stir back into the dish.
  7. Serve hot.
