Description
Hoppin’ John is a southern dish made with black-eyed peas and rice, traditionally served on New Year’s Day for good luck.
Ingredients

- 1 cup black-eyed peas, dried
- 4 cups water
- 1 cup long-grain rice
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 smoked ham hock
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
Instructions
- Rinse the black-eyed peas and soak them in water overnight.
- In a large pot, combine soaked peas, water, ham hock, onion, bell pepper, garlic, salt, and peppers.
- Bring to a boil, then reduce heat and simmer for 1 hour or until peas are tender.
- Add rice to the pot and stir well.
- Cover and cook for an additional 20 minutes or until rice is cooked.
- Remove ham hock, shred meat, and stir back into the dish.
- Serve hot.
Notes
- Use fresh black-eyed peas if available.
- Adjust spices to taste.
- Serve with cornbread for a complete meal.
