- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 onion, quartered
- 4 cloves garlic, smashed
- 4 sprigs fresh rosemary
- 4 sprigs fresh thyme
- 1 lemon, halved
Instructions
- Preheat your oven to 325°F (165°C).
- Remove the giblets and pat the turkey dry with paper towels.
- Rub olive oil all over the turkey.
- Season the turkey inside and out with salt and pepper.
- Stuff the cavity with onion, garlic, rosemary, thyme, and lemon.
- Place the turkey on a roasting rack in a roasting pan.
- Roast the turkey for about 13-15 minutes per pound.
- Check the internal temperature; it should reach 165°F (75°C).
- Let the turkey rest for 20-30 minutes before carving.

- Use a meat thermometer for accuracy.
- Cover the turkey with foil if it browns too quickly.
- Save the drippings for gravy.
