Ingredients

- 4 eggs
- 2 tortillas
- 1 cup cooked black beans
- 1 cup diced tomatoes
- 1/2 onion, chopped
- 1 jalapeño, minced
- 1/2 cup crumbled queso fresco
- 1/4 cup chopped cilantro
- Salt to taste
- Pepper to taste
Instructions
- Heat a skillet over medium heat.
- Add onions and jalapeños, sauté until soft.
- Add diced tomatoes and cook for 5 minutes.
- Season with salt and pepper.
- In another skillet, fry tortillas until crispy.
- Fry eggs sunny-side up in the skillet.
- Assemble by placing tortillas on a plate, topping with beans, eggs, and sauce.
- Garnish with queso fresco and cilantro.
Notes
- Serve with avocado slices.
- Adjust spice level by adding more or less jalapeño.
- Can substitute black beans with refried beans.
