Description

A traditional Mexican breakfast dish featuring eggs and a spicy tomato sauce.


Ingredients

  • 4 eggs
  • 2 tortillas
  • 1 cup cooked black beans
  • 1 cup diced tomatoes
  • 1/2 onion, chopped
  • 1 jalapeño, minced
  • 1/2 cup crumbled queso fresco
  • 1/4 cup chopped cilantro
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat a skillet over medium heat.
  2. Add onions and jalapeños, sauté until soft.
  3. Add diced tomatoes and cook for 5 minutes.
  4. Season with salt and pepper.
  5. In another skillet, fry tortillas until crispy.
  6. Fry eggs sunny-side up in the skillet.
  7. Assemble by placing tortillas on a plate, topping with beans, eggs, and sauce.
  8. Garnish with queso fresco and cilantro.

Notes

  • Serve with avocado slices.
  • Adjust spice level by adding more or less jalapeño.
  • Can substitute black beans with refried beans.
