Ingredients

  • 1 whole turkey (1214 pounds)
  • 1/2 cup unsalted butter, softened
  • 2 tablespoons kosher salt
  • 1 tablespoon black pepper
  • 2 onions, quartered
  • 4 carrots, cut into chunks
  • 4 celery stalks, cut into chunks
  • 1 bunch fresh thyme
  • 1 bunch fresh rosemary
  • 1 bunch fresh sage
  • 4 cups low-sodium chicken broth

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Remove the turkey innards and pat the turkey dry.
  3. Rub the softened butter all over the turkey.
  4. Sprinkle salt and pepper inside and outside the turkey.
  5. Stuff the cavity with onions, carrots, celery, and herbs.
  6. Place the turkey on a roasting rack in a large roasting pan.
  7. Pour chicken broth into the bottom of the pan.
  8. Roast the turkey for about 3 to 4 hours, or until the internal temperature reaches 165°F (74°C).
  9. Let the turkey rest for 30 minutes before carving.

  • Brining the turkey overnight improves flavor.
  • Use a meat thermometer for accurate cooking.
