Ingredients

- 2 cups basmati rice
- 1 cup lentils
- 1 cup mixed vegetables
- 2 tablespoons ghee
- 1 onion, sliced
- 2 tomatoes, chopped
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- Salt to taste
- Fresh coriander for garnish
Instructions
- Rinse the basmati rice and lentils until the water runs clear.
- In a pot, heat ghee and add cumin seeds.
- Add sliced onions and sauté until golden brown.
- Stir in chopped tomatoes and cook until soft.
- Add mixed vegetables, turmeric powder, and salt. Cook for 5 minutes.
- Add lentils and rice to the pot. Pour in 4 cups of water.
- Bring to a boil, cover, and simmer until rice and lentils are cooked.
- Sprinkle garam masala and garnish with fresh coriander before serving.
Notes
- This dish pairs well with yogurt or raita.
- Adjust spice levels according to your preference.
- Can be made ahead and reheated for serving.
