Ingredients

  • 4 bone-in chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup chicken broth
  • 2 sprigs fresh rosemary
  • 1 lemon, juiced

Instructions

  1. Season the chicken thighs with salt, pepper, garlic powder, and onion powder.
  2. Set the instant pot to ‘Sauté’ mode and add olive oil.
  3. Once hot, add the chicken thighs skin-side down. Sear for 5 minutes until golden brown.
  4. Flip the chicken and sear the other side for 3 minutes.
  5. Add chicken broth, lemon juice, and rosemary to the pot.
  6. Close the lid and set to ‘Manual’ for 15 minutes.
  7. Allow for natural release for 10 minutes, then quick release any remaining pressure.
  8. Remove chicken and let rest for a few minutes before serving.

Notes

  • For extra flavor, marinate chicken in spices for a few hours before cooking.
  • Serve with roasted vegetables for a complete meal.
  • Use the leftover broth as a base for a sauce.
