- 4 bone-in chicken thighs
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 cup chicken broth
- 2 sprigs fresh rosemary
- 1 lemon, juiced
Instructions
- Season the chicken thighs with salt, pepper, garlic powder, and onion powder.
- Set the instant pot to ‘Sauté’ mode and add olive oil.
- Once hot, add the chicken thighs skin-side down. Sear for 5 minutes until golden brown.
- Flip the chicken and sear the other side for 3 minutes.
- Add chicken broth, lemon juice, and rosemary to the pot.
- Close the lid and set to ‘Manual’ for 15 minutes.
- Allow for natural release for 10 minutes, then quick release any remaining pressure.
- Remove chicken and let rest for a few minutes before serving.
Notes
- For extra flavor, marinate chicken in spices for a few hours before cooking.
- Serve with roasted vegetables for a complete meal.
- Use the leftover broth as a base for a sauce.
