Description

A flavorful and easy dish combining chicken, sausage, and rice in an Instant Pot.


Ingredients

  • 1 pound chicken breast, diced
  • 1 pound smoked sausage, sliced
  • 1 cup onion, chopped
  • 1 cup green bell pepper, chopped
  • 1 cup celery, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Turn on the Instant Pot and select ‘Sauté’.
  2. Add olive oil and heat.
  3. Add chicken and sausage, cooking until browned.
  4. Add onion, bell pepper, celery, and garlic; cook until softened.
  5. Stir in diced tomatoes, rice, chicken broth, Cajun seasoning, salt, and pepper.
  6. Close the lid and set to ‘Manual’ for 10 minutes.
  7. After cooking, allow natural release for 5 minutes, then quick release remaining pressure.
  8. Fluff the jambalaya with a fork before serving.

Notes

  • Adjust seasoning to taste.
  • Can substitute shrimp for chicken.
  • Serve with hot sauce for extra flavor.
