Description

Tender pulled pork cooked in an instant pot, served on soft buns.


Ingredients

  • 3 lbs pork shoulder
  • 1 cup barbecue sauce
  • 1 cup chicken broth
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 hamburger buns

Instructions

  1. Season the pork with paprika, cumin, salt, and pepper.
  2. Turn the instant pot to sauté mode and brown the pork on all sides.
  3. Add sliced onion and minced garlic, sauté for 2 minutes.
  4. Pour in chicken broth and barbecue sauce.
  5. Seal the lid and cook on high pressure for 60 minutes.
  6. Allow natural release for 10 minutes, then quick release remaining pressure.
  7. Shred the pork using two forks.
  8. Serve on hamburger buns with extra barbecue sauce if desired.

Notes

  • Use a meat thermometer to ensure pork is cooked to at least 190°F for easy shredding.
  • Let the pork rest for a few minutes before shredding.
