Description
A refreshing Italian pasta salad featuring cheese tortellini.
Ingredients

- 12 oz cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup black olives, sliced
- 1/2 cup red onion, diced
- 1/4 cup fresh basil, chopped
- 1/2 cup Italian dressing
- Salt and pepper to taste
Instructions
- Cook the cheese tortellini according to package instructions.
- Drain and rinse under cold water to cool.
- In a large bowl, combine tortellini, tomatoes, cucumber, olives, onion, and basil.
- Pour Italian dressing over the salad and toss to combine.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Serve cold for best flavor.
- Can be made a day in advance.
- Add grilled chicken for extra protein if desired.
