A savory and spicy one-pot dish from Louisiana.
Ingredients

- 1 lb. chicken, diced
- 1 lb. shrimp, peeled and deveined
- 1 lb. smoked sausage, sliced
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 3 cups chicken broth
- 2 cups long-grain rice
- 2 tsp Cajun seasoning
- 1 tsp thyme
- Salt to taste
- Black pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken and sausage, cook until browned.
- Add onion, bell pepper, celery, and garlic. Cook until soft.
- Stir in diced tomatoes, chicken broth, rice, Cajun seasoning, thyme, salt, and pepper.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 20 minutes.
- Add shrimp, stir, and cook for another 5-10 minutes until shrimp are cooked through.
- Remove from heat and let sit for 5 minutes before serving.
Notes
- Adjust spice level by adding more or less Cajun seasoning.
- Can substitute chicken with other proteins.
- Serve with crusty bread or salad.
