Ingredients

  • 1 lb. chicken, diced
  • 1 lb. shrimp, peeled and deveined
  • 1 lb. smoked sausage, sliced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 3 cups chicken broth
  • 2 cups long-grain rice
  • 2 tsp Cajun seasoning
  • 1 tsp thyme
  • Salt to taste
  • Black pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and sausage, cook until browned.
  3. Add onion, bell pepper, celery, and garlic. Cook until soft.
  4. Stir in diced tomatoes, chicken broth, rice, Cajun seasoning, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat to low.
  6. Cover and simmer for 20 minutes.
  7. Add shrimp, stir, and cook for another 5-10 minutes until shrimp are cooked through.
  8. Remove from heat and let sit for 5 minutes before serving.

Notes

  • Adjust spice level by adding more or less Cajun seasoning.
  • Can substitute chicken with other proteins.
  • Serve with crusty bread or salad.
