Ingredients

  • 4 chicken thighs, bone-in, skin-on
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 lemon, juiced
  • 1 cup chicken broth
  • 1 cup mixed vegetables (carrots, bell peppers, green beans)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine olive oil, salt, pepper, garlic powder, onion powder, smoked paprika, rosemary, thyme, and lemon juice.
  3. Add chicken thighs to the bowl and coat them evenly with the marinade. Let sit for 30 minutes.
  4. Heat a large oven-safe skillet over medium-high heat and sear the chicken thighs skin-side down for 5-7 minutes until golden brown.
  5. Flip the chicken thighs and add chicken broth and mixed vegetables to the skillet.
  6. Transfer the skillet to the preheated oven and roast for 25-30 minutes until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  7. Remove from the oven and let rest for 5 minutes before serving.

Notes

  • For extra crispy skin, broil the chicken for the last 2-3 minutes.
  • You can substitute chicken thighs with chicken breasts if preferred.
