- 4 chicken thighs, bone-in, skin-on
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 lemon, juiced
- 1 cup chicken broth
- 1 cup mixed vegetables (carrots, bell peppers, green beans)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine olive oil, salt, pepper, garlic powder, onion powder, smoked paprika, rosemary, thyme, and lemon juice.
- Add chicken thighs to the bowl and coat them evenly with the marinade. Let sit for 30 minutes.
- Heat a large oven-safe skillet over medium-high heat and sear the chicken thighs skin-side down for 5-7 minutes until golden brown.
- Flip the chicken thighs and add chicken broth and mixed vegetables to the skillet.
- Transfer the skillet to the preheated oven and roast for 25-30 minutes until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove from the oven and let rest for 5 minutes before serving.
Notes
- For extra crispy skin, broil the chicken for the last 2-3 minutes.
- You can substitute chicken thighs with chicken breasts if preferred.
- Feel free to add your choice of vegetables.
