Ingredients

Instructions

  1. Wash and peel the potatoes, then cut them into 1-inch cubes.
  2. Boil the potatoes in salted water until tender, about 15 minutes. Drain and let cool slightly.
  3. In a bowl, whisk together olive oil, white wine vinegar, Dijon mustard, salt, and pepper.
  4. Add the warm potatoes to the dressing and gently mix to coat.
  5. Fold in the chopped red onion and parsley.
