Description
Classic French style potato salad inspired by Julia Child’s recipe.
Ingredients

- 2 pounds waxy potatoes
- 1/2 cup olive oil
- 1/4 cup white wine vinegar
- 1 tablespoon Dijon mustard
- 1/2 cup finely chopped red onion
- 1/4 cup chopped fresh parsley
- Salt to taste
- Pepper to taste
Instructions
- Wash and peel the potatoes, then cut them into 1-inch cubes.
- Boil the potatoes in salted water until tender, about 15 minutes. Drain and let cool slightly.
- In a bowl, whisk together olive oil, white wine vinegar, Dijon mustard, salt, and pepper.
- Add the warm potatoes to the dressing and gently mix to coat.
- Fold in the chopped red onion and parsley.
- Let the salad sit for at least 30 minutes before serving to allow flavors to meld.
Notes
- Use Yukon Gold or new potatoes for best texture.
- For variation, add capers or diced pickles.
- Serve chilled or at room temperature for optimal flavor.
